Describe your cooking style in three words

Simple, eclectic, delicious

The weirdest thing I've ever eaten is...

Conch willy (really - it's quite a delicacy in St Lucia).

In my cupboard you will always find...

Passata and chipotle chilli paste. They make life so simple and tasty.

What would you cook for the Queen?

Pulled pork! My version takes 10 hours slow cooking and is super-delicious in soft rolls. It's very messy but I think Her Majesty would enjoy the opportunity to eat with her fingers as she can't do it very often. I'd give her a bib!

I would tell parents of fussy eaters...

They're not running a restaurant. Keep it simple, try to serve food the whole family likes but don't pander to picky palates by being a short order cook. They'll learn to like food if you don't make it a big issue.

My guilty food pleasure is...

Dinner in bed in front of the telly. Sshhh!!!

My most memorable food experience (so far) is...

Marmalade on toast and a cup of tea immediately after the birth of my children. Food never tasted so good.

For my last meal I would eat...

A dozen oysters natural, steak bearnaise and pommes frites, then sticky toffee pudding.

I would never, ever eat...

That's a tough one. I eat everything!

When I'm home alone I cook...

Spaghetti carbonara - indulgent, quick and super delicious.

If I had to eat one thing for the rest of my life it would be...

Salted caramel brownies. I can never eat enough of them.

My kitchen is always...

Being used to test recipes. Barely a day goes by when there's not some concoction brewing.

Number one on my foodie bucket list is...

Le Gavroche! I've lived in the UK for 20 years and for some reason I've never got around to going. I love classic French food.

My must have kitchen gadget is...

Hard to pick one but it would have to be my food processor. I use it constantly.
