Easter nests are a classic chocolatey treat and just brilliant for making with children. Apart from melting the chocolate, they can make them pretty much by themselves. There's the breaking up of the shredded wheats, bashing the biscuits, mixing in the chocolate, filling the cases and of course decorating.
I think children feel a huge sense of pride if they've made something with very little help from a grown up.
I've chucked in sultanas, mini marshmallows and crushed biscuits to transform these Easter goodies into a rocky road experience. I'd definitely recommend using silicone cases and leaving the nests inside them - as they make the eating experience a little less messy.
Rocky Road Easter nests
8 shredded wheats (full size)
4 digestive biscuits
2 handfuls mini marshmallows
2 handfuls sultanas
Jelly beans to decorate
1. Break up the shredded wheat into a large mixing bowl using your fingers. You don't want any lumps.
2. Break up the digestives into little pieces then stir into the shredded wheat, along with the marshmallows and sultanas.
3. Break the chocolate into small pieces. Put in a heatproof bowl and melt in the microwave on full power for 30 seconds. Remove and stir and then continue to melt in 30 second bursts, stirring in between until smooth and fully melted.
4. Pour the melted chocolate into the bowl of shredded wheat and then mix until everything is evenly coated.
5. Put 16 silicone cake cases into a couple of bun trays so the nests keep their shape.
6. Using a teaspoon, fill silicone cake cases with the mixture, press each one down in the centre to create the nest effect.
7. Nestle three jelly beans in the centre of each nest and then pop in the fridge to harden for an hour.
Tip: If you're feeling creative you could do three batches using white, milk and dark chocolate.
