Most Office Workers Are 'Bored With Lunch': Here's Five Delicious, Cheap And Healthy Superfood Lunches To Try Instead

It's easy to fall into a lunch rut and bring the same old soggy sarnies or tired salad to work each day.

A recent poll of 2,000 employees by Lurpak found a third of office workers have exactly the same lunch every day - with a cheese sandwich the most popular choice.

Although half of those polled admitted they were bored by lunch, they said they kept eating the same food day after day because it was convenient, or they were used to the routine.

But lunchtime can, and should, be something to look forward to. And you may be surprised to hear that mixing up your lunch routine doesn't need to break the bank.

Culinary wizard David Bez, author of 'Salad Love: How to Create a Lunchtime Salad, Every Weekday, in 20 Minutes or Less', created us five bespoke lunch recipes to prove just that.

He used just a handful of healthy, cheap and delicious ingredients. (Psst, you can buy Bez's best selling book here.)

The salad aficionado bought the entire ingredients list (apart from a few cupboard staples) for around £17.50. That's a healthy lunch packed with superfoods for just £3.50 per day.

Go shopping at the weekend and try this next week.

You will need:

Brown rice, watercress, butternut squash, carrots, beetroots, red onions, sun dried tomatoes, fennel, chickpeas, yogurt, roasted chicken, pumpkin seeds, fresh mint and fresh thyme.


Monday

Ingredients: 1/2 shaved carrot, a handful of sun dried tomatoes, a handful of olives, 2 celery stalks, 1/3 of a can of chickpeas, a handful of pumpkin seeds and a handful of mint.

Dressing: 2 tbsp extra virgin olive oil, 1 tsp cider vinegar, 1 tsp english mustard, a pinch of salt.


Tuesday

Ingredients: a handful of watercress, 1/4 of a small roasted butternut squash, 1/4 of a raw small red onion, a handful of pumpkin seeds, 1/3 of a can of chickpeas and a handful of mint.

Dressing: 2 tbsp extra virgin olive oil, 1 tsp balsamic vinegar, a pinch of salt.


Wednesday

Ingredients: a handful of watercress, 2 celery stalks, 50 grams of roasted chicken, 1/2 package of pre cooked beetroot, 1/2 natural yogurt pot, a handful of pumpkin seeds and a sprinkle of fresh thyme.

Dressing: 2 tbsp extra virgin olive oil, 1 tsp english mustard, a pinch of salt.


Thursday

Ingredients: 50 grams of cooked brown rice, 1/4 of a small roasted butternut squash, a handful of sun dried tomatoes, 50 grams of roasted chicken, a handful of pumpkin seeds and a sprinkle of thyme.

Dressing: 2 tbsp extra virgin olive oil, 1 tsp balsamic vinegar, a pinch of salt.


Friday
