Deliciously Ella Shares Her Gluten-Free Mince Pie Recipe

Mince pies are synonymous with Christmas. But for people with a gluten intolerance, they are a festive treat to be avoided.

Knowing that its unfair to miss out on such a delicacy at Christmas time, Deliciously Ella has shared her easy peasy gluten-free mince pie recipe.

This recipe makes 12 mince pies.

You will need

For the mincemeat:

2 apples, cored and chopped into small pieces

1 vanilla pod, split lengthways, seeds only

100g raisins

100g sultanas

100g dried cranberries

1 tsp ground cinnamon

1 tsp ground ginger

Juice of 2 oranges

1 tbsp coconut oil

For the crust:

400g ground almonds

6 tbsp coconut oil

20 medjool dates (about 400g)

Gluten-free flour for dusting surface

Method

  • Preheat the oven to 180°C, gas mark 4.
  • Chop two red apples into small pieces and put in a saucepan along with the seeds from your vanilla pod, raisins, sultanas, cranberries, cinnamon, ginger and a dollop of coconut oil.
  • Chop your oranges in half and squeeze the juice from them into the pan.
  • Turn on the hob and cook the mince pie filling for about 30 minutes until everything is really soft.
  • While the fruit mix cooks, begin to make the crust. Add the ground almonds, dates, coconut oil and some water into a blender and mix together for roughly one minute. It's important that all of the dates are broken down because they help stick the mixture together.
  • Sprinkle flour on a board and place the crust mixture on top of it.
  • Roll out the pastry until it's roughly 0.5cm thick.
  • Use a 10cm pastry cutter to cut circles out of your pastry.
  • Grease a muffin tin with coconut oil and add your pastry circles. Then pop them in the oven and bake for eight minutes until they are golden brown.
  • While you're waiting for the bases to cook, make small star shapes using the leftover pastry.
  • Once the bases have baked, fill them with a large dollop of the fruit mix and add the pastry stars to the top.
  • Pop them back in the oven for another eight minutes.
  • Take out your mince pies and leave to cool for 20 minutes.
