While the traditional sushi with rice is pretty straightforward, in my effort to reduce grains and maximizes nutrition in my diet I wanted to take a step further and create a sushi roll packed with a powerhouse of nutrition.

Tiramisu is one of those dishes that benefits greatly from being allowed to rest so the flavours can really mingle together. The Coffee mix liquid moistens the matzo right through although you don't even have to tell anyone that there's matzo in it. And of course you don't even have to tell them you used gluten-free matzo.

Keep in the freezer so you can always have a healthy treat on hand when unexpected guests descend on you! Once set in the freezer, I like to cut into slices, so its ready to serve when needed. If you don't like sultanas you could add dried pineapple pieces.
