Chia seeds. Mangoes. Could it get any better? Or simpler? Nope.
This recipe is my go to breakfast or dessert option (sometimes I swap the mango for kiwi or mashed raspberries so play about with that), especially when I'm short on time or low on food (because it really only requires me having a piece of fruit on hand as chia are a staple in my cupboard). And whilst it looks so simple, this chia pudding is one of the tastiest and simplest breakfast options I always go to and find keeps me feeling full for hours (thanks to those handy chia seeds loaded with healthy fats, protein, and fibre; perfect for those of you on a weight loss mission)!
Which is essential for a big eater like me!
Plus it also goes to show that eating well doesn't need to be confusing or expensive. Sure you can dress this up with extra goodies like cacao nibs, nuts, coconut flakes, goji berries, or even make it with coconut milk or coconut water... but some days simple is best.
So get your belly fed in under 10 minutes (or prep it the night before so theres no waiting for the chia seeds to absorb in the morning)!
2 Tablespoons of chia seeds
3/4 cup filtered water
1 mango cheek (half a mango) diced and flesh removed from skin/peel.
1. Combine the chia and water in a bowl and stir every couple of minutes to avoid clumping. The chia will take about 5-10 minutes to absorb the water (add less or more depending on how runny you like it).
2. Prep you mango while your chia is absorbing and then simply add and stir when the chia is ready.
