Halloween Banana Cupcakes recipe

Makes 12 cupcakes

For the cupcakes:

3 bananas, mashed
2 eggs
100g butter, softened
50g sugar
150g plain flour, sieved
2 tsp baking powder
½ tsp ground cinnamon
a pinch ground nutmeg
splash of milk

For the icing and decoration:

60g butter, softened
125g icing sugar
½ tsp vanilla extract

Icing decorating tubes

Method:

  1. Preheat the oven to 160°C/gas mark 4. Fill a 12-hole tin with paper cupcake cases.

  2. Place the mashed bananas and eggs into a mixing bowl and mix until well combined. Add the softened butter and beat until creamy.

  3. Add the sugar, flour, baking powder and spices to the banana mixture and stir gently until everything is well combined. Add a splash of milk if the mixture feels too stiff.

  4. Divide the mixture evenly between the 12 paper cases, ensuring the tops are smooth and even.

  5. Bake for 20-25 minutes. To test whether your cupcakes are ready, touch one lightly - if it springs back, they’re ready.

  6. Leave the cupcakes in the tin for 10 minutes to cool slightly before moving them to a wire rack to cool completely.

  7. To make the icing, place the softened butter in a bowl and sift on the icing while beating with a spoon or an electric beater until smooth. Add a teaspoon or two of milk if the mixture becomes too stiff. Using the back of a teaspoon, spread the icing evenly on top of each cupcake.

  8. Once iced, decorate with Cadbury products.
