This quiche is great for a picnic with a side of fresh green salad, or take a slice for breakfast on the run, or wrap in cos or romaine lettuce with a dab of honey mustard, its filling without having to add any carbs.
We're almost at the end of the English asparagus season - it's traditional to stop cutting the spears by Midsummer's Day - and I was looking for a way to extend it a little by making something I could put in the freezer.
This is such a simple recipe it's hardly deserving of the name but it's so good I'm going to share it with you anyway. It makes a lovely lunch or light supper.
