Recipe of the Week: Beef Fillet With Rocket Salad and Zucchini

This is a very simple recipe to do but it is very important to use good beef. The combination of the very thin courgettes, rocket, parmesan and seared beef is very delicious especially if you add a few drops of good balsamic vinegar.

When you sear the beef make sure your pan is really hot otherwise the beef might cook unevenly and stick. Have a good weekend!

Ingredients - Serves 2

300g piece of beef fillet

2 medium sized courgettes

150 g wild rocket washed

1 lemon

100g of parmesan shavings

1 tsp of chopped thyme

3 tblsp of olive oil

1 tsp of good balsamic vinegar

Sea salt

Black pepper

Method

Rub 1tblsp of olive oil on to the beef fillet then season with salt and pepper. Sprinkle on the fresh chopped thyme. In a hot frying pan seal the beef on all sides then remove from the pan and place on a plate to cool down.

Using a mandolin slice the courgettes in to thin strips. In a bowl mix 1tblsp of olive oil with the juice of half a lemon, salt and pepper and toss the courgettes and the rocket so they absorb the dressing.

Using a sharp knife slice the beef fillet into 1/2cm slices or as thin as you can slice and place the slices onto a large serving plate so the whole plate is covered. Season with salt and pepper a drizzle of olive oil and good quality balsamic vinegar.

Scatter the sliced courgettes and rocket on top and finish off with the parmesan shavings.
