While Pancake Day brings us that rare opportunity to feel celebratory on a Tuesday - not to mention a wealth of tossing-related puns - it can also be a culinary minefield (Will your batter be lumpy? Will your flipping technique be a flop?).

Luckily, we've got all the ingredients you need to make tonight's Shrove Tuesday celebrations a recipe for success - from the scientific formula for the perfect flipping tecnique and the secret to light, fluffy batter to the ultimate chocolate lover's recipe.

Classic Pancake Recipe

Makes: 12 pancakes
110g plain flour
pinch salt
2 eggs
200ml milk mixed with 75ml water
50g butter

1. Sieve the flour into a bowl
2. Make a well in the centre of the flour with the back of your mixing spoon
3. Break the eggs into the well
4. Add the milk and water mix a little bit at a time, whisking all the while
5. Whisk until the mixture is lump-free and creamy
6. Melt 50g of butter in a frying pan
7. Pour the excess butter in a bowl leaving enough to generously coat the pan base
8. Ladle in your batter mix and swirl until the base is completely covered
9. Cook for about one minute, flip and cook for a further minute.

Sorry guys, but the best pancakes are French, cooked by French hands, with French products and eaten in...France. Easy. ;-)

Tempted to agree with you, as a francophile, except I had sourdough pancakes this weekend that beat any other pancakes I ever had.

Now if I could have eaten them in France, THAT would have been perfect.
