Summer Barbecue Recipes: Sticky Chicken Skewers

Marinated in lip smacking honey, soy sauce and lime with a hit of garlic and ginger, these tender chicken skewers will go down a treat with adults and kids alike.

Simple to prepare and quick to cook, you'll find yourself making them again and again.

Ingredients

8 skewers

500g mini chicken fillets

2 tbsp dark soy sauce

2 tbsp honey

1 lime, juice and zest

2 cloves garlic, crushed

2 tsp freshly grated ginger

1. If you're using wooden skewers, soak in water for at least 30 minutes before putting the meat on them, to prevent them from burning.

2. Lay out the chicken fillets in a shallow dish. Mix the soy sauce, honey, lime zest and juice, garlic and ginger in a bowl and then pour over the chicken.

3. Cover with cling film and chill in the fridge for at least an hour before cooking. Do it the night before for a really tender result.

4. Thread 1-2 fillets onto each skewer depending on how far you want to spread the chicken and cook on the barbecue for 10 minutes, turning halfway through cooking.

Serve with plenty of salad.
