Cupcakes: 3 Recipes To Satisfy Your Sweet Tooth

Whether you're a domestic goddess or not, cupcakes never fail to impress. They tick both boxes on the taste and appearance front plus they're easy to whip up on a rainy afternoon at home.

1. Nutella cupcakes

Prep time: 20 minutes

Cook time: 20 minutes

You will need:

100g dark chocolate

250ml boiling water

260g brown sugar

3 eggs

220g self-raising flour

75g plain flour

30g cocoa powder

250g butter, softened

250g icing sugar

1 tsp vanilla extract

2 tbsp milk

100g nutella milk chocolate bar

Roasted hazlenuts without skins for decoration

2. Pumpkin cupcakes with maple syrup

Prep time: 15 minutes

Cook time: 25 minutes

You will need:

256g plain flour

1 tsp baking soda

1 tsp baking powder

1 tsp course salt

1 tsp ground cinnamon

1 tsp ground ginger

¼ tsp grated nutmeg

¼ tsp ground allspice

220g packed brown sugar

200g white sugar

4 large eggs, lightly beaten

220 g unsalted butter, melted and cooled

1 can pumpkin puree

220g cream cheese, room temperature

4 tbsp unsalted butter, room temperature

1 tsp real maple syrup

1 tsp vanilla extract 2 cups (250g) icing sugar

Cook time: 20 minutes

You will need:

200g strawberries, plus a few extra to decorate

100ml sunflower oil

100g golden caster sugar

4 tbsp ground flaxseed mixed with 6tbsp water

180g Doves Farm gluten free self raising flour

1 tsp bicarbonate of soda

55g dairy-free sunflower margarine

30ml rice milk or other dairy-free milk

1/2 tsp vanilla extract

250g golden icing sugar
