Best-selling children's author Annabel Karmel shares this fabulous recipe from her new cookbook, 'Quick and Easy Toddler Recipes'.
This is a variation on the traditional Eton Mess – an English dessert consisting of a mixture of strawberries, meringue and cream which is served at Eton College on June 4 to mark the start of summer.
Makes 4 portions
150ml whipping cream
200g Greek yoghurt
75g bought meringues, broken into pieces
1 large ripe peach, diced
200g raspberries
1. Whip the cream until it forms soft peaks, then add the yoghurt and mix until smooth.
2. Fold in all the remaining ingredients (reserving a few raspberries and pieces of peach and meringue for garnish) until evenly combined, then spoon it into 4 individual serving classes.
3. Chill for 15 mins before garnishing and serving.
