Are you wondering what you could do with your leftover roast chicken? Well here is another one of my left over roast chicken recipes - although this time I spruced it up just a little!
Here's what I used:
4 tbsp vegetable oil
4 small onions
3 pieces bacon
2 cloves garlic
340g arbotti rice
1 litre chicken stock
2 tbsp butter
1/4 (or what ever you have left over) roast chicken
1 tbsn dried thyme
How to make:
1. Put two tbsp of vegetable oil in a pan to heat, whilst doing this slice up your onions and add to the warmed oil along with your chopped garlic for around six minutes, then add your now chopped up bacon stirring regularly allow to simmer for another 4-10 minutes until nicely caramelised.
2. In a seperate, bigger pan add your remaining two tbsp of vegetable oil and heat. Add your arbotti rice and simmer for about two minutes, then start adding your stock about 300ml at a time until all the stock has been absorbed by your rice.
3. Add your now caramelised onion, bacon and the two tbsp of butter and your left-over chicken and mix well until all butter has melted. Salt and pepper to taste.
4. Serve and garnish with your dried thyme.
