When it comes to desserts, Tiramisu is a classic. Chocolate, coffee, cream... what's not to like? It's easy to make at home too.

Here's what you'll need (serves six):
3 eggs, separated
100g caster sugar
120ml Marsala
4 tbsp brandy
500ml mascarpone
400g savoiardi biscuits/lady fingers
350ml very strong black coffee, cooled
Dusting of cocoa powder
STEP ONE: Combine the ingredients
In a large bowl whisk together the egg yolks and sugar until they form a thick pale yellow mixture. Add 50ml of Marsala and 1 tbsp of brandy and mix through, before gently folding in the mascarpone. Whisk your egg whites until they form soft peaks and gently fold through the mascarpone mixture until thoroughly combined.
STEP 2: Soak the biscuits
Pour the remainder of the Marsala and brandy into a clean bowl, along with 300ml of very strong cooled coffee. Dip your sponge fingers into the liquid until they become damp but not soggy. Line the bottom of a 22cm/8in dish with a layer of the biscuits, breaking them if needs be to create a tight layer. Spread half of the mascarpone mixture evenly over the top. Add another layer of soaked fingers on top and then pour over the remaining egg and sugar mixture. Dust the top with a layer of cocoa powder.
STEP 3: Chill
Cover the tiramisu with cling film and chill in the fridge for at least two hours, or overnight if possible, before serving.
