Packed with healthy carrots and oats, they are one of 'Toddler chef' Fiona Faulkner's most popular recipes.
Fiona cleverly uses red Leicester cheese to disguise the orange flecks of grated carrots in these muffins, so even the fussiest of eaters won't clock the fact that they're eating a vegetable.
It takes just 15 minutes to whip up a batch of the muffin mixture, which can be frozen ready to bake whenever you're ready.

150g red Leicester cheese, grated
1 tsp baking powder
50g porridge oats
100g plain yoghurt
2 large eggs
1/2 tsp bicarbonate of soda
200g grated carrots
