If your children refuse to eat vegetables in savoury dishes, it's worth trying out a sweet vegetable recipe, such as these pancakes made from mashed sweet potatoes.
'Toddler chef' Fiona Faulkner has a wealth of experience of getting fussy eaters to consume their five-a-day. She knows that if a child is point-blank refusing to let a single vegetable cross her lips, it's no use simply forcing her to sit in front of a plate full of greens.
You have to be a bit inventive about how you present dishes. While children may view a plate full of vegetables as a chore, present them with a stack of pancakes and they'll consider it a special treat.

Makes:18-20 small pancakes
Ingredients:
120g plain flour
1 tsp baking powder
1 tsp ground cinnamon
70g caster sugar
1 egg, beaten
15g unsalted butter, melted
120ml milk
3 medium sweet potatoes, boiled, peeled and mashed
Vegetable oil, for frying
To serve
Blueberries
Strawberries
Icing sugar
