This is a healthy twist on strawberries and cream using a more exotic version of cream made from coconut pulp and macadamia nuts.
Macadamia nut oil is a rich source of monounsaturated fatty acids, which are reputed to lower cholesterol, while coconut pulp helps to clear effects of summer heat in the body, quenches thirst and is a male reproductive tonic.
You will need:
Half a vanilla pod
50g raw macadamia nuts
The pulp of a young medium-sized coconut
250g fresh strawberries
A little of the coconut juice (optional)
1. Slit the vanilla pod open with a sharp knife and scrape out the seeds.
2. Place the nuts and the coconut pulp in a blender of food processor.
3. Add the strawberries and vanilla seeds. Pulse all the ingredients to give a smooth, silky texture. If the smoothie seems very thick, add enough coconut juice to give it a better texture. Pour into four glasses and serve.
