You will need:
450g (1lb) turkey breast fillets
50g (2oz) butter
4 tbsp sweet sherry
4 tbsp double cream
25g (1oz), roughly chopped macadamia nuts
Pack of stir-fried vegetables to serve, optional
What to do:
1. Beat out turkey slices between two sheets of damp greaseproof paper, into escalopes.
2. Melt butter in a frying pan and cook escalopes for 4-5 minutes, turning once. Remove from pan and keep warm.
3. Reduce heat and stir the sherry into pan juices with cream and Macadamia nuts. Season and cook, stirring for 1 minute.
4. Pour sauce over escalopes and serve immediately on a bed of stir-fried vegetables, if using.
