Chicken Drumsticks With Lemon, Honey And Mustard Recipe

Kids love food they can eat in their hands, so these tasty chicken drumsticks with a sweet and tangy coating should go down a storm for play date teas. Prep them ahead and all you'll need to do is bung them in the oven and serve with salad, fluffy rice or potato wedges.

Cook time:40 minutes

Makes: 4
Ingredients:

8 chicken drumsticks

1 lemon, zest and juice

1 tbsp wholegrain mustard

1 tbsp olive oil

1 tbsp clear honey

Instructions:

1. Put the drumsticks into a large ovenproof dish. Scatter the meat with lemon zest, smear with the mustard, pour over the juice, oil and honey, season liberally with salt and pepper then give it all a good shake, cover with cling film and allow to sit in the fridge for an hour (if you have time).

2. Pre-heat the oven to 200C/180C fan/gas 6. Cover the dish with foil and roast for 25 mins, then remove the foil and cook for a further 15 mins until golden and the juices run clear.

3. Serve in the middle of the table with plenty of green salad and fluffy rice on the side.

Cook's tip: Save money and buy bags of frozen chicken drumsticks. Just remember to put them in a covered dish in the fridge the night before you want to use them so they defrost in time.
