Cauliflower Cheese On Toast Is The Comfort Food We Need Right Now

Forget your jam, marmite or avocado on toast. The much needed Autumn / Winter 2020 edition is cauliflower cheese on toast. Yep, we went there.

Nigella Lawson made her fans aware of this delicious idea on Twitter, retweeting a recipe from self-confessed “obsessive cook”, Del Sneddon. And the accompanying picture looked like the perfect comfort food for these times.

Del’s tweet gave a quick overview of how to make the winter-inspired dish, too.

How to make it:

1. Lightly toast two slices of thick bread and set aside. Then boil a few cauliflower florets for 10 minutes and set aside.

2. Make a roux with 20g of butter and the same of flour. Add 100ml milk slowly through a low heat. When the sauce begins to thicken, add two teaspoons of mustard powder and a handful of mozzarella and strong cheddar (add to taste).

3. Stir through until smooth then add in cauliflower and mix. Let it cool for five minutes, then tip on the uncooked side of the bread and bake until golden on top.

4. Add a few chilli flakes or pepper on top for a little extra.
