Love cupcakes? You HAVE to try your hand at making these courgette and pistachio numbers dreamed up by Pomp De Franc. 1) They're mint green and everyone knows mint is the colour of classy good times. 2) They're ridiculously yummy AND contain vegetables which means they're somewhere on the healthy spectrum. 3) They're really easy to make and the ingredients list doesn't cost a fortune. Apart from all of this, they make the perfect accompaniment to a glass of Prosecco or a cup of tea and some friends. Perfect for hen dos, baby showers and girls' nights in. Happy baking!

Ingredients for section one

111 ml Sunflower oil

132g granulated sugar

2 eggs

1 tsp vanilla

Ingredients for section two

24g shelled and chopped pistachios

36g ground almonds

1tsp allspice

1tsp ground ginger

2tspn cinnamon

1tsp salt Ingredients for section three 12; tsp bicarbonate soda

120g self raising flour

40g plain flour

Instructions

Preheat oven to 180 degrees.

Beat ingredients from section one together on high speed until thick.

Stir in ingredients from section two.

In a separate bowl mix flours and bicarbonate soda. Sift into mixture and then stir into mixture until just combined.

Spoon into cupcake cakes and place in oven.

Ingredients and instructions for cream cheese icing

125g Unsalted butter, softened

125g full-fat cream cheese

275g icing sugar

Make sure butter is soft, then, using a whisk or electric mixer beat with cream cheese until smooth and light.

Stir in the icing sugar with a spook until it comes together and then whisk briefly until light and smooth.

Pipe or spoon onto cooled cupcakes.

Ingredients and instructions for edible paper fans 2 A4 sheets rice paper

Edible green spray paint Spray both sheets with the edible spray paint.

Cut A4 piece into 4 width way pieces.

Hold all pieces together and cut a curved edge down long side of paper.

Concertina paper and dip edges in white chocolate.

Stand in icing on top of cake.
