Henry started his career as a commis chef with the Michelin-starred chef Bruno Loubet. Even before he met John, Henry had dreamed of revolutionising fast food and used to bore on to friends working in other restaurants about his desire to democratise good food. He left the food world to work at the Daily Telegraph and then joined Bain & Company where, as a senior manager, he got heavily involved with re-organizing national and multinational companies and met John Vincent. With John, he returned to his roots as they founded Leon in 2004
